For the May challenge Marcelina from Marcellina in Cucina dared us to make Lamingtons. An Australian delicacy that is as tasty as it is elegant. I decided to make the classic Lamington, a cube of sponge cake dipped in chocolate icing then coated with desiccated coconut. In Croatia we call them čupavci. The Croatian name comes from the word "čupavi", which means “furry,” from the look of the coconut. Thank you Marcelina for this wonderful and delicious challenge!

Daring Bakers July 2014 - Surprise cakes challenge
For the July Daring Baker’s Challenge, Ruth from The Crafts of Mommyhood challenged us to bake a cake. But not just any cake, she asked us to add in a special surprise for our eyes as well as our taste buds! I decided to make Lorraine Pascale's zebra cake (it had been on my to-do list for such a long time). Thank you Ruth for this wonderful and delicious challenge!

Daring Bakers June 2014 - Cinnamon rolls challenge
This month the Daring Bakers kept our creativity rolling with cinnamon bun inspired treats. Shelley from C Mom Cook dared us to create our own dough and fill it with any filling we wanted to craft tasty rolled treats, cinnamon not required! So I decided to give a new taste to cinnamon rolls dough by substituting apples and cinnamon with blueberries and cheesecake filling. It was so delicius. Thank you Shelley for this wonderful and delicious challenge!

Daring Bakers December 2013 - Let's make whoopie challenge
The December Daring Bakers' Challenge had us all cheering - the lovely and talented Bourbonnatrix of Bourbonnatrix Bakes was our hostess and challenged us to make fun, delicious and creative whoopie pies! Delicious little cake-like cookies sandwiching luscious filling in any flavors we chose... What else is there to say but "Whoopie!" I decided to make classic chocolate whoopie pies with mascarpone filling. Thanx Burbonnatrix for the wonderful challenge!

Daring Bakers October 2013 - Savory pot pies challenge
Hannah of Rise and Shine was our October 2013 Daring Bakers' hostess and she challenged us to bake our own double crusted savory pot pies. Using any from scratch crust and filling we choose, we are allowed to get completely creative with our recipe, showing off the savory flavors and fillings from our home or region. I made shallow chicken zucchini pie (when I made pie crust I realised that I don't have enough dough for big and deep dish so I used smaller and shallow one) and mini veal pot pies with vegetables. Daring Bakers July 2013 - Eeine Meeine Miney Moe challenge
In a "celebration" of past Daring Baker and Daring Cook challenges, Lisa challenged all of us to search through the Daring Kitchen archives and pick any one we'd like! The REAL challenge was picking which delicious recipe(s) to try! I've browsed past challenges and with a little help from Eeine Meeine Miney Moe I choosed one savory and one sweet challenge from Daring Baker list - basic quick bread (February 2012) and swiss swirl ice cream cake (July 2010). Quick bread was so delicious and simple to make. I modified recipe for swiss swirl ice cream cake - rolls are filled with mascarpone, white chocolate and whipped cream, instead of ice cream I made frozen yogurt and the middle is red berries sauce - it's perfect dessert for hot summer days.

Daring Bakers June 2013 - Life of pie challenge
Rachel from Pizzarossa was our lovely June 2013 Daring Bakers' host and she had us whipping up delicious pies in our kitchens! Cream pies, fruit pies, chocolate pies, even crack pies! There's nothing like pie! In this challenge, the mandatory requirement was to make one or more pies using the recipes provided from Rachel. I decided to make two fruit pies - crostata di marmelatta di ciliegie (I was thrilled with the flavor of vanilla in the pastry) and double crust apple pie (classic pie that we all love). Daring Bakers March 2013 - Hidden veggies challenge
Ruth from Makey-Cakey was our March 2013 Daring Bakers’ challenge host. She encouraged us all to get experimental in the kitchen and sneak some hidden veggies into our baking, with surprising and delicious results! Daring Bakers December 2012 - Panettone challenge
The December 2012 Daring Bakers' challenge was hosted by the talented Marcellina of Marcellina in cucina. Marcellina challenged us to create our own custom Panettone, a traditional Italian holiday bread! In this challenge, the mandatory requirement was to make a panettone in the traditional tall cylindrical shape usin the recipe provided from Marcellina and for the filling we could use different flavours. Daring Bakers November 2012 - Twelve days of cookies challenge
Holiday season is the time for sharing and Peta of Peta Eats is sharing a dozen cookies, some classics and some of her own, from all over the world with us. In this challenge, the only mandatory requirement was to make at least one of the 12 items provided from either Peta recipe or link plus our own favorite cookie, square, bar or other type of celebration sweet. I decided to make chocolate hazelnut crinkle cookies (I have chocolate crinkle cookies recipe on my blog, but addition of hazelnuts sounded great) using the recipe that Peta provided for us and traditional croatian holiday wafer squares using my recepe. Thanks Peta for the wonderful challenge!

Daring Bakers October 2012 - Mille feuille challenge
Our October 2012 Daring Bakers' challenge was hosted by Suz of Serenely Full. Suz challenged us to not only tackle buttery and flaky puff pastry, but then take it step further and create a sinfully delicious Mille Feuille dessert with it! This was a real challenge for me - my first home made puff pastry and I was baking puff pastry for the first time (usually I bought already baked puff pastry). I used the recipe that Suz provided and I love it! I had a problem with baking, because my tray wasn't heavy enough and my pastry puffed up to much (so I used only two sheets instead of three). But it was very tasty and I will never buy puff pastry again. Thanks Suz for the wonderful challenge!

Daring Bakers August 2012 - Filled pâte à choux swans challenge
Kat of The Bobwhites was our August 2012 Daring Baker hostess who inspired us to have fun in creating pate a choux shapes, filled with crème patisserie or Chantilly cream. We were encouraged to create swans or any shape we wanted and to go crazy with filling flavors allowing our creativity to go wild!
I decided to make swans because I have already published on my blog cream puffs and raspberry wreaths. I had a lot of fun creating swans. Thanks Kat for the wonderful challenge!
