Daring Bakers May 2015 - Lamingtons challenge


For the May challenge Marcelina from Marcellina in Cucina dared us to make Lamingtons. An Australian delicacy that is as tasty as it is elegant. I decided to make the classic Lamington, a cube of sponge cake dipped in chocolate icing then coated with desiccated coconut. In Croatia we call them čupavci. The Croatian name comes from the word "čupavi", which means “furry,” from the look of the coconut. Thank you Marcelina for this wonderful and delicious challenge! 


Sponge cake
  • 2 eggs
  • 200 g caster sugar
  • 50 g melted butter
  • 200 ml milk
  • 300 g all-purpose flour
  • 12 g baking powder
Preheat oven to moderate 180°C. Line a 23 x 33 cm baking pan with baking parchment and set aside. Beat egg yolks and sugar in an electric mixer until very thick. Sift flour and baking powder over the mixture and beat until combined. Trickle milk and cooled melted butter down sides of bowl and fold in thoroughly. Whisk egg whites with a pinch of salt until stiff peaks form. Add to the mixture and fold in thoroughly but lightly using a fork. Pour into a baking pan and bake for 20 - 25 minutes. Check the sponge by inserting a skewer into the centre, it should come out clean when the sponge is baked. Turn the sponge out immediately onto a wire rack to cool. 


Chocolate icing
  • 100 g dark chocolate
  • 125 g butter
  • 70 g caster sugar
  • 400 ml milk
In a small saucepan, on low heat melt butter and chocolate with sugar and milk. Combine well and remove from the heat. 

Assembly
  • 200 g desiccated coconut
Place desiccated coconut in a shallow bowl. Cut cooled sponge into even little cubes. Dip each piece into the chocolate icing (allow excess to drip off), then toss gently into the coconut. Stand cakes on a wire rack to set (about 2 hours).


Prošlo je puno vremena od mog posljednjeg sudjelovanja u Daring Bakers izazovima. Neki mi se zadaci nisu svidjeli, a neke nisam stigla odraditi. Kišno razdoblje i dosada naveli su me da početkom mjeseca virnem na stranicu i pogledam što je novi izazov. Čupavci! Nisam ih dugo radila, ni jela, a kao dijete sam ih obožavala. Odmah sam izvukla mamin recept i napravila ih. 

Biskvit
  • 2 jaja
  • 200 g šećera
  • 50 g rastopljenog maslaca
  • 200 ml mlijeka
  • 300 g glatkog brašna
  • 1 vrećica praška za pecivo
Izmiksajte žumanjke sa šećerom. Dodajte rastopljeni maslac i šećer pa kratko izmiksajte. Dodajte prosijano brašno s praškom za pecivo i miksajte dok se sastojci ne povežu. Bjelanjke izmiksajte u snijeg i dodajte u smjesu, lagano miješajući uz pomoć vilice. Smjesu izlijte u kalup dimenzija 23 x 33 cm obložen papirom za pečenje. Pecite 20 - 25 minuta u pećnici zagrijanoj na 180°C (čačkalicom provjerite ako je biskvit pečen). Ispečen biskvit ohladite na rešetki.


Čokoladni umak
  • 100 g tamne čokolade
  • 125 g maslaca
  • 70 g šećera
  • 400 ml mijeka
Na laganoj vatri otopite maslac i čokoladu. Dodajte šećer i mlijeko i uz miješanje kuhajte dok ne zakuha.

Slaganje
  • 200 g kokosa
Ohlađeni biskvit izrežitena jednake kockice. Svaku kocku umočite u čokoladni umak pa uvaljajte u kokos. Čupavce stavite na rešetku i pustite otprilike dva sata, da se umak stisne.

  10. To je taj balans, ti si se vratila kad sam ja posle duzeg vremena odsustvovala:) Nisam ih ni jela ni pravila stolecima, al ih ovakve pamtim, male, lepo natopljene cokoladom, koja zavrsi na majici kad izbrises prste:)
